Description
Green Zebra is an indeterminate heirloom-type tomato celebrated for its striking chartreuse skin marked with darker green stripes, and its complex flavor balancing sweetness and tang. Bred by tomato breeder Tom Wagner in the 1980s, it challenged the perception that green tomatoes are unripe by delivering a fully ripe fruit with a bright, citrusy bite and juicy, emerald-colored flesh. Its smaller size—typically 3–4 ounces—makes it ideal for salads, garnishes, and specialty market displays.
The plants are vigorous, producing steadily throughout the summer, especially in warm, sunny locations with well-drained soil. A slight yellow blush between stripes and a softening of the fruit determine harvest timing; Its unique appearance and flavor have made it a favorite among chefs and gardeners seeking something beyond the traditional red tomato palette.
