Description
The Banana fingerling potato is an heirloom variety cherished for its elongated, banana-like shape, thin yellow skin, and creamy, firm-textured flesh. Originally from South America, it became popular in North America through specialty markets and restaurant kitchens, where its size and texture shine in roasting, pan-frying, and warm salads. The variety’s nutty, buttery flavor deepens with storage, making it a gourmet favorite.
Banana fingerlings are late-maturing and thrive in sandy or loamy soils with moderate fertility. Their smaller tuber size makes them ideal for “new potato” harvests, though full maturity yields more pronounced flavor. While they store well under cool, dark conditions, their thin skins can make them more prone to bruising during handling.
